Forma a New Way of Pasta
Not many can claim to make pasta the way an Italian Nonna can in sunny Singapore, but restaurant group The Cicheti Group and homegrown pasta artisan Chef Lee Yum Hwa of Ben Fatto can. Perhaps that's why they've joined forces to create their newest venture: Forma, which opened its doors to members of the public in May.
Forma is a trattoria like no other in Singapore: one where you can simply venture past it's glassdoors to notice it's most extreme different from many storefronts in Singapore: a full pasta making kitchen where pasta makers create the pasta made for a lot of dishes in Forma. Pasta dishes available in Forma aren't like the kinds you find in common Italian restaurants. Instead the pasta pushes through very old, nearly extinct pasta shapes and culinary techniques to create these shapes. Executive chef Dylan Cheong, it can be seen, will impress with the amount of research he's made into the pasta making shapes, and you'd often see him first working hard at the glass store window fronts making pasta dough. With stints at Italian restaurants like Gattopardo and Osteria Mozza, staging at Modena’s three-Michelin-starred Osteria Francescana, Chef Cheong is your go to man for some fascinating pasta dishes and history. Expect beautiful, al-dente pasta with a variety of shapes and flavours, all which have their own hand-tested textures that are made perfect for tasting.
They also boost a good range of mains that aren't pasta related: take the opportunity to try dishes such as the Tomahawk steak, which comes served with a trio of sauces: homemade steak sauce, mustard dallas verde, and porcini gremolata. Easily able to feed a group of 4, the steak is beautifully made, with a good amount of tenderness and smokiness within the meat.
