Milk Chocolate, Tonka Bean & Lime Cake Ingredients
Tonka Bean & Lime Crème Brûlée
900ml double cream
4 limes, zested
110g castor sugar
8 tonka beans
8 egg yolks
 
Dark Chocolate Flourless Sponge
135g dark chocolate
120g butter
150g castor sugar
80g cocoa powder
10g fleur de sel
3 whole eggs, lightly beaten
1 tsp vanilla bean extract
 
Milk Chocolate Mousse
660g chocolate, melted
355ml custard
8g gelatine sheets, melted
5g fleur de sel
530ml whipped cream
Milk chocolate glaze, for glazing
Milk chocolate shards, for garnishing
 
Preparation
For the tonka bean & lime crème brûlée: Heat the double cream and lime zest in a saucepan over low heat to a boil. Remove saucepan from the heat and set aside. Whisk the castor sugar, tonka beans and egg yolks in a mixing bowl until creamy. Gradually pour in the heated double cream mixture and whisk continuously until well incorporated. Pour the crème brûlée mixture into baking moulds in a water-bath and bake in a preheated oven at 110°C for about 10 minutes. Remove the tonka bean and lime crème brulee from the oven and set aside.
 
For the dark chocolate flourless sponge: Heat the dark chocolate and butter in a saucepan over medium heat until chocolate has melted. Remove saucepan from the heat and add in the castor sugar, cocoa powder, fleur de sel, beaten eggs and vanilla bean extract and whisk until well incorporated. Pour the batter into a greased baking pan and bake in a preheated oven at 150°C for about 30 minutes. Remove the dark chocolate flourless sponge from the oven and set aside to cool.
 
For the milk chocolate mousse: Place the melted chocolate into a mixing bowl and fold in the custard. Add in the melted gelatine and fleur de sel and whisk well. Fold in the whipped cream and set aside.
 
Place the dark chocolate flourless sponge into the bottom of a baking pan and top with the tonka bean and lime crème brûlée and milk chocolate mousse. Finish off with two layers of dark chocolate flourless sponge sandwiching another layer of milk chocolate mousse. Glaze with milk chocolate glaze and garnish with milk chocolate shards on the sides of the cake.
