Caramelised Coconut Refresher

Ingredients
2 young coconuts, flesh reserved and cut into fine slivers
800ml young coconut juice
16ml lime juice
32g sugar
1 lime, zested into slivers
Grand Marnier, to taste
Preparation
Place the coconut flesh slivers onto a baking tray and burn lightly with a blowtorch until caramelised.
Set aside the caramelised coconut slivers to cool.
Mix the young coconut juice, lime juice, sugar and lime zest slivers in a saucepan and cook over high heat until temperature of the mixture reaches 80°C.
Remove saucepan from the heat and strain the coconut mixture.
Place the coconut mixture into a freezer and freeze until frozen.
Remove the frozen coconut sorbet from the freezer and scratch with a fork to create an ice mash.
Place the caramelised coconut flesh slivers into the bottom of each serving glass.
Add a layer of coconut sorbet.
Repeat the layers until glass is full. Garnish with additional lime slivers and a splash of Grand Marnier, to taste.
