Macerated Pomelo & Mango Panna Cotta

Macerated Pomelo & Mango Panna Cotta Ingredients
123g pomelo flakes
14g brown sugar
10 coriander leaves, finely chopped
5ml Grand Marnier liqueur
Coriander leaves, for garnishing
Mango Panna Cotta
300ml milk
300ml cream
600ml mango purée
125g sugar
1 vanilla pod, split and scraped
16g gelatine sheets, softened
 
Preparation
Heat the milk, cream, mango purée, sugar and vanilla pod to a boil in a saucepan. Remove saucepan from the heat and add in the softened gelatine. Mix well.
 
Remove and discard the vanilla pod and pour the mixture among 6 glasses. Place the glasses into the refrigerator and chill the panna cotta for at least 3 hours.
 
Mix all the ingredients in a mixing bowl and place in the refrigerator to macerate for at least an hour.
 
Spoon the macerated pomelo flakes over the mango panna cotta and garnish with coriander leaves.
