Apple Tart

95g butter
50g (each) icing sugar and sugar
2 whole eggs
95g ground almonds
40g all-purpose flour
1 puff pastry sheet (20-cm in diameter)
3 green apples, peeled and sliced
A pinch of brown sugar
Place the butter, icing sugar and sugar into a mixing bowl and beat until creamy. Add in the whole eggs one at a time and beat well. Fold in the ground almonds and all-purpose flour. Transfer the almond cream into a pipping bag with a nozzle attached and keep chilled for about an hour.
Place the puff pastry sheet into a round baking pan and pipe in the chilled almond cream. Arrange the sliced green apples on top and sprinkle with a pinch of brown sugar. Bake the apple tart in a pre-heated oven at 170ºC until golden brown, for about 35 minutes. Makes 1 tart
