Crispy cod fillet stuffed with spicy coconut prawn paste & passion fruit coconut dressing

Ingredients
100 cod fillets, sliced
50g spinach, blanched
1 whole egg, lightly beaten
4 Vietnamese rice wrappers, soaked until pliable
100g corn flour
Cooking oil, for deep-frying
Coconut chips, for garnishing
Passion Fruit Coconut Dressing
100ml white wine
10ml coconut milk
100g passion fruit purée
5g (each) sugar and salt
Spicy Coconut Prawn Paste
150g prawn meat paste
60g corn flour
10g (each) sugar, minced garlic and minced shallot
5g (each) curry powder and chilli paste
1g (each) turmeric powder and chilli powder
150ml coconut milk
Preparation
• For the passion fruit coconut dressing: Place all the ingredients into a food processor and pulse until smooth. Set aside.
• For the spicy coconut prawn paste: Mix all the ingredients in a mixing bowl into a moist coconut prawn paste.
• Spread the spicy coconut prawn paste onto each slice of cod fillet and top with another slice of cod fillet. Wrap the cod sandwich with the blanched spinach and brush with the egg wash. Wrap again with a rice wrapper and dip into the egg wash and then dredge with corn flour. Set aside.
• Heat a pot of cooking oil until smoking point and deep-fry the stuffed cod rolls until golden browned. Drain well on absorbent paper towels.
• Cut the crispy stuffed cod rolls into half and place onto each serving plate. Spoon the passion fruit coconut dressing around the serving plate and garnish with coconut chips. Serves 4
