Smoked Turkey & Pear Salad

Smoked Turkey & Pear Salad Ingredients
1 turkey breast (200g)
Apple wood chips, for smoking
1 pear (120g), sliced
100g red grapes, peeled and de-seeded
40g caramelised walnuts
200g mesclun salad

Yoghurt Dressing
200ml yoghurt
60ml honey
30ml red wine vinegar
30ml extra virgin olive oil
For the yoghurt dressing: Whisk all the ingredients in a mixing bowl and set aside.
Place apple wood chips into a preheated charcoal grill and smoke the turkey breast for about 15 minutes. Remove the smoked turkey breast from the charcoal grill and place onto each serving plate. Add in the sliced pear, red grapes and caramelised walnuts. Serve with the mesclun salad and drizzle over the yoghurt dressing.
