Pecorino Soup with Gnocchi

Pecorino Soup with Gnocchi Ingredients
40g butter
100g onions, peeled and chopped
40g flour
200ml chicken stock
120g pecorino cheese
80g parmesan cheese
80ml cream
Freshly ground white pepper, to taste
16 gnocchi, cooked al dente
Pecorino chips, for garnishing

Preparation
Heat the butter in a sauté pan and sauté the chopped onions until fragrant.

Add in the flour and mix well.

Add in the chicken stock and simmer the mixture until the chicken stock is slightly thickened.

Pour the mixture into a food processor and pulse.

Gradually add in the pecorino and parmesan cheeses and pulse until well incorporated.

Transfer the cheese mixture into a saucepan and heat the mixture to a boil.

Reduce heat and add in the cream and continue cooking until the mixture is smooth.

Season with freshly ground white pepper, to taste.

Ladle the pecorino soup into each serving bowl and serve with the al dente gnocchi.

Garnish with pecorino chips.
