Chefs moving out from the Big Apple Most were surprised when Daniel Boulud’s right hand man, Chef Gavin Kaysen announced that he would his long time position as Executive Chef at Café Boulud  to open up with own restaurant in his very own hometown. Opting out from the Big Apple where chefs dream of launching their solo careers, he decided to launch his solo gig in Minneapolis. His desire to be closer to his family is the push for his shift. To some old timers, this shift is an admission of defeat. But the mentality is slowly changing. Smaller cities are now luring top chefs to stamp their food mark in these new locations and allowing them to expand their limitless creative possibilities.
