It is highly important for the food and beverage industry to govern the issue of hygiene and quality of the food prepared. In Singapore, all food handlers (even if it is readily prepared food), will have to go through a series of lectures and tests to attain a certificate of recognition that they have understood the proper manners to handle food. Likewise in Malaysia, the MBSA and UiTM’s Faculty of Hotel and Tourism have collaborated to help Prima 2 food court hawkers on improving their food hygiene, quality and preparation. The food court is not only opened to UiTM students, but also to their family as well during the university’s convocation and thus requiring the need to ensure monitoring of quality of their food and beverages. Students are have been assigned to advise food operators on hygiene, quality and safety of food preparation, storage methods and effective marketing strategies, as well as submitting their suggestions in aiding this enforcement project.
