About Mark Best
Mark Best started by discovering the stoves accidentally and ended up becoming an unquestionable symbol of the new Australian Cuisine. His perseverance and his ‘eternal dissatisfaction’ (as he calls it himself) are the vitamins for his spectacular personal development working at several Mchelin star retstaurants through his career, he's taken his inspirations and set up some of the best contemporary Australian restaurants in his country, from the brilliant Marque to the trendsetting Peninsula Bistro, Balmain.
About Ivan Brehm
Chef/Owner Ivan Brehm leads the team at Nouri. Following several years working in the kitchens of Per Se in New York, Hibiscus in London and Mugaritz in the Basque Country, Ivan joined Heston Blumenthal where he was Development Chef at his Experimental Kitchen at The Fat Duck for 4 years. He was also Executive Chef of the Kitchen at Bacchanalia in Singapore, earning a Michelin star for the establishment back in 2016.
