Blackwattle X Garage Project 's Beer Fiesta

With the advent of beer pairings in Singapore's food scene, Blackwattle held a fine party with the up-and-coming Garage Project - a colloboration between the maverick head chef Joeri Timmermans and one of the most exciting indie brewers around. Right off the bat, I knew that I was heading into something interesting.
Within the cool, sleek steampunk interior of the restaurant, they served up a 5-course dinner and paired it with some seriously unique beers, here's what I especially liked:
Deep Fried Potato Bread & Whipped Roe Dip w/ Mon Pitite Chou Saison (Golden Ale)
The Golden Ale's a farmhouse ale with very clean hints of spicy notes, the crispness and spiciness of the beer complemented the deep fried crust of the potato bread, along with the savoury richness of the Whipped Roe Dip.

Celeriac Burnt Butter, Spaghetti, Chives & Australian Truffles w/ Garagista India Pale Ale
There's an interesting story behind the name of this ale, it was brewed in the confines of an old petrol station called Garagista. Definitely not the most typical of origins. It displayed fresh and fruity aromas with floral notes: a relatively easy-going, easy-drinking IPA. The bitter hops of this IPA was handy in mellowing out the tanginess of the burnt butter.
The highlight of this pairing experience was Chef Joeri's unconventional, tried-and-tested cuisine, with prime examples being the Potato Malt Beer Caramel Ice Cream. Yes, it's a potato ice cream. It was paired off with the Cookies & Cream Belgian Ale, a beer with a good amount creaminess similar to a good pint of guiness, and a balanced medium sweet flavour. This atypical, exciting combination got my head spinning; I can't wait to see what else Blackwattle has in store for the future.
