Chef Julien Royer: In Memory of Paul Bocuse To pay homage to Chef Paul Bocuse, Chef Julien Royer presented a five-course wine pairing dining on 12 April 2018. Dishes presented include blue lobster with pouilly fuissé nage, a truffle soup presented for the French President in 1975, red mullet in crusty potato scales, fricassée of Bresse chicken in cream sauce, and traditional baba rum.
