Formerly a private table at the back of a meat emporium, Chef Renzo Garibaldi’s restaurant Osso in Lima is now one of Peru’s favourite eateries. Known for their osso carpaccio, deconstructed cutlets, artisanal hamburgers, the restaurant also has a tasting menu to be eaten with hands only.
