Japanese chefs are known for being ingredients-oriented and Chef Hiroyuki Shinkai is no different. Over at Lewin Terrace, he has prepared dishes to showcase the winter produce of Japan. You could savour 3-course(SGD$48++) or 4-course lunches(SGD$78++) or get a specially curated omakase menu at SGD$88++.
From now till February 2018, you can feast on a 7-course dinner with your loved ones. Start of with an amuse bouche of poached oysters then continue with a Crab Mille Feuille. Truffle Egg Polenta comes next followed by a Foie Gras Confit where Chef Shinkai marinates the foie gras in brandy before gently cooking it. The two mains of Lobster Porcini Risotto and Hokkaido(A4) Wagyu steak is sure to leave you wanting for more. The risotto is made using premium Japanese rice and a rich lobster stock. The wagyu steak doesn't need introduction, but the accompanying sauce is enhances the flavours of the fatty beef. The dessert is made with a trio of chocolate and betroot and apple sorbet! Also, fresh truffle is added to the mix. The dinner is priced at SGD$198++ and an additional of SGD$120 for 6 glasses of wine pairing is sure to elevate the experience!
Chef Shinkai lets the ingredients speak for themselves and one thing he cannot emphasize enough on is the freshness of the product. "In Singapore, its harder to procure really fresh ingredients - we do our best though. But I find that sauces are important in this regard to bind the flavours of the products together." The dishes he presents at Lewin Terrace are essentially the flavours he enjoys himself. Do head down and treat yourself at Lewin Terrace.
