US Cheeses featuring Chef Wanthana Nikonsaen of Tamarind Hill


To showcase the versatility of US cheeses, Chef Wanthana Nikonsaen of Tamarind Hill caramelises tomatoes, melts mozzarella cheese on a pan with a little cornflour, and tops them with prawns and red curry. “I have reduced the coconut milk, since the cheese already has a creaminess,” says Chef Nikonsaen. “In traditional Thai cuisine, you don’t find much cheese used, but if we try mixing cheese with Thai herbs and spices, they actually match well, and can become something new.”
