Hosting the collaboration is Chef Ryan, whose ingredient-driven brand of modern gastronomy has established Tippling Club as an ever-evolving culinary institution for almost a decade—placing 27th in Asia’s 50 Best Restaurants and 11th in Asia’s 50 Best Bars in 2017.
Sharing a love for Japanese ingredients and influences, both chefs will join forces to present a Japan-inspired 10-course menu for each of the extraordinary evening—resulting in genuinely innovative permutations of flavour profiles and textures that are unique to their undeniable synergy.
Embark on a culinary journey through the picture-perfect prefectures of Japan as Chef Ryan eases into the evening with a playful progression of inventive snacks, setting the stage for Tippling Club signatures such as Langoustine with kohlbari, dashi cream, and shiso; Salsify Tagliatelle with jamon iberico and 63c hens egg; and the unapologetically umami A4 Toriyama Beef.
Keeping in theme, Chef David presents Willow Smoked Bonito with tofu and apple; Cuttlefish with koshigari congee, shiitake custard; and flavourful Dry Aged Duck complemented by the rousing richness of foie gras, kumquat, and jus gras.
Capping off the evening with a duet of sweets—Chef Ryan explores the tropical Textures of Coconut; while Chef David plays it up with a creamy Japanese-style Rose Parfait layered with bracing salted plum and dark chocolate mochi.
In true Tippling Club fashion, the entire menu is complemented with pairing of Nippon-nuanced cocktails concocted using Japanese ingredients and products—curated by one of Japan’s leading bartenders. Arriving from the city that never sleeps is London-trained, Tokyo-based brand ambassador Soran Nomura of Kyrö Distillery Company, who will go behind the stick on both evenings to take diners on a tipsy trajectory through Japan.
