salad of Thai cucumber withorange chilli paste, prawn &semi-boiled duck egg

4 prawns, blanched
1 whole duck egg, semi-boiled and halved
1 tbsp dried prawn powder
Salad Of Thai Cucumber
4 white tumeric slices
2 tbsp (each) picked mint and coriander leaves and shallot slices
1 tbsp pickled garlic and cucumber slices
1 tsp julienned orange chilli
Orange Chilli Paste
5 coriander roots
A pinch of salt
3 tbsp (each) unpeeled Thai garlic slices
5 orange chillies
3 tbsp unpolished castor sugar
Fish sauce and lime juice, to taste
• For the orange chili paste: Pound coriander roots with a pinch of salt in a mortar with a pestle until fine. Set aside. Pound unpeeled garlic slices and orange chilies into a paste. Sprinkle the paste with unpolished castor sugar and season to taste with fish sauce and lime juice. Set aside.
• For the salad of Thai cucumber: Place all the ingredients
into a mixing bowl. Add in the orange chilli paste and toss well.
• Place the salad of Thai cucumber with orange chillipaste into a serving bowl and top with blanchedprawns, halved semi-boiled duck egg. Sprinkle with dried prawn powder. Serves 1
