Demonstrating recipes such as Irish salmon with barley broth, John Dory squid ink with rainbow beetroots, and sable with strawberries using American parmesan, Monterey jacks, and cream cheese, Irish Chef Kevin Thornton encourages young chefs in the audience to cook with their soul. “I could relate to what he shared,” says Chef Petrina Loh of Morsels. “About putting your soul into the food and then just letting the product shine.” Chef Thornton adds, “I like to use artisanal, handmade cheeses; it’s about the personal connection. Food is about people bringing people together. It’s all about a connection to each other.”

U.S. Dairy Export Council (USDEC), a non-profit, independent membership organization that represents the global trade interests of U.S. dairy producers, proprietary processors and cooperatives, ingredient suppliers and export traders and they carry a portfolio of cheeses that includes not only the crowd favourites but also U.S. original and unique cheeses.
