Steamed Lobster Stuffed with Shrimp & Sesame in Mushroom Sauce

80g shrimps, finely chopped
½ tsp sesame oil
A pinch of salt
½ lobster
2 tbsp (each) white and black sesame seeds
Mushroom Sauce
6 shiitake, finely cubed
4 shimeiji, finely cubed
2 flower mushrooms, finely cubed
2 tbsp soy sauce
½ tsp sugar
80ml chicken stock
For the mushroom sauce: Place all the mushrooms into a food processor. Season with soy sauce and sugar. Gradually add in the chicken broth and pulse until smooth.
Season the chopped shrimps with sesame oil and a pinch of salt. Stuff the seasoned shrimp paste into the lobster and coat with white and black sesame seeds. Set aside. Heat a sauté pan over a high heat until hot and sear the stuffed lobster until it turns pinkish. Transfer
the pan-seared lobster onto a heatproof dish and steam in a hot steamer until just done. Remove and spoon the mushroom sauce over. Serves 1
