Michelin Guide SG 2017

Michelin Guide SG 2017 29 Jun 2017 marked a night of joy for those who have been awarded star(s) in the second edition of Michelin Guide.
 
30 establishments have each received one Michelin star, including eleven new entrants to the list and the two hawker stalls who have retained their star. 7 restaurants have made it to the list of two Michelin stars including new entrant Waku Ghin who has been bumped up from its one Michelin star in the previous year. There is still only 1 glorious three Michelin stars restaurant in Singapore – Joël Robuchon Restaurant.


Director Michael Ellis comments: “There are probably thousands of hawker stalls in Singapore. We do our homework to identify. Singapore is arguably unique in many ways. It is in my experience that they are the most passionate food lovers in the world. I’ve never seen the level of passion like people get into fist fight into who serves the best laksa or curry puffs. Singapore is also the most digital: things are always posted – I eat, I see, I post. So it’s like everything is available digitally. Our inspectors do somewhat of an analysis of where we think we can find the best hawker food. The accessibility is much easier. To do the Singapore guide, we use inspectors from Hong Kong, Korea, Japan and Europe. They’re trained – they’re walking palates. All food is about product by definition. You’re eating something. And that’s transformed in some way. It’s going to have taste. And that’s going to be unique around the world. We think our inspectors are able to identify that.”
 
He adds further, “Just as I can ask, “Are Singaporeans able to understand French food or Italian food? Of course they are. But if we really want a deep dive into Singaporean hawker culture, the bringing on of a Singapore Hawker specialist is on our radar.”
 
There were however, two restaurants who have fallen from grace of the Michelin Inspectors – Terra by Seita Nakahara and Forest by Sam Leong.
