Bountiful Seafood Harvests from Miyagi Prefecture at Kanda Wadastumi

The Miyagi prefecture is situated in the north-west Pacific coastline of Japan and one of the country's premier fisheries prefectures, with one of the richest fishing grounds in the world. The restaurant’s star Executive Chef Hara Shinji spins his culinary mastery to create dishes inspired by Miyagi’s bountiful offerings, reflecting the purity of flavours and authentic presentation that are the hallmarks of the Kanda Wadatsumi dining experience.
Among the highlights for the month, diners will savour the flavours of the famous Miyagi salmon, the silver rouge, a staple of the prefecture and available year-round (unlike the seasonal salmon typically available during the Autumn season). Perhaps one of the prefecture’s most unusual and exotic delicacies is the hoya or sea pineapple, known for its distinctive ocean-like flavour and perfectly complemented with sake. The rich coastal waters around the Miyagi Prefecture are home to the anago or salt-water eel, which is expected to be a star ingredient due to its beautiful, velvety texture and fresh flavours. Also, there are sakes to be had in tandem with the food.
