Chef Ryohei Hieda of Shoun RyuGin personally visited one of Taiwan’s famous Ayu farms, forming a friendship with the farm’s owner by showing him his RyuGin Grilled Ayu fish video and inviting him to taste the dish. The owner of the Ayu farm was very touched by the flavor and moved by the delicate way that Chef Ryohei Hieda handled and prepared the fish. Having now sourced the best quality live Ayu in Taiwan, Chef Ryohei Hieda presents this signature RyuGin dish to guests.
