Massimo Bottura’s Osteria Francescana – No. 2 On World’s Top 50 An Italian chef born in Modena, Chef Massimo Bottura finds inspiration from the world around him – art, music, slow food, and fast cars.  “Catch the flash in the dark, because it only passes once,” says Chef Bottura. “Expect the unexpected.” From his menu you’ll find dishes such as croccantino of foie gras covered with Noto almonds and Pietmont hazelnuts, with traditional balsamic vinegar from Modena, grey and black rice with Oscietra Royal caviar, ox rib-eye with pickled vegetables, extra virgin olive oil potatoes and black truffle, and zuppa inglese with chocolate crème brulée, pastry cream, and savoiardo cake. “Cooking is a call to act,” says Bottura. “In 2016, I founded the non-profit association Food for Soup to empower communities to fight against food waste, in the interest of social inclusion and individual wellbeing.”
