Dalva 20 Year Old Dry White Port [$140], with amber colour and pink hues, has a lovely nutty palate with notes of citrus, pears, honey, combined with a delicate nose of honeysuckle and exotic fruits. The finale is long and elegant.
Alone, this versatile Dalva Dry White Port has a delicately nutty yet fruity balanced profile. Served together with Brasserie Gavroche's Grandpa Henri's Baked Pork Terrine With Duck Liver, the searing acidity complements the bold flavours of the terrine and stands up to the fatty richness of the pork belly and unctuous duck liver inside the dish.
