S.Pellegrino and Tippling Club welcomed S.Pellegrino Young Chef (SPYC) 2016 winner Mitch Lienhard to Singapore for a four-hands collaboration with Chef Ryan Clift, Chef-Owner of Tippling Club and Chef Judge of S.Pellegrino Young Chef South East Asia 2015, on Thursday, 30 March 2017.
It was a stellar eight-course gastronomic experience featuring signature dishes from Chef Ryan and Chef Mitch, paired with fine wines over fine dining still mineral water Acqua Panna and sparkling mineral water S.Pellegrino.
Chef Mitch, the young and talented chef de cuisine of three-Michelin-star Manresa in Los Gatos, California, showcased his contemporary approach to classic cooking with his Radishes Baked in Salt with Oscietra Caviar, and Chorizo Dumplings with Grilled Squid and Bergamot.
Diners were also treated to Chef Mitch’s award-winning dish that won him the title of S.Pellegrino Young Chef at the Grand Finale in Milan last year out of 19 other global finalists. His signature Roasted Duck with Yam and Spiced Orange was inspired by his home state of Michigan and the scent of burning leaves and maple.
On the other hand, Chef Ryan’s distinctive brand of modern gastronomy is featured through the innovative repertoire of his signature creations. The Petuna Ocean Trout is a beautiful display of the delicate fish with beetroot, smoked ox tongue and horseradish cream. The Atra Aero, with sourdough ice cream and crispy Horlicks, is the perfect example of Chef Ryan’s playful, avant-garde executions.
The S.Pellegrino Young Chef is a global competition that recognizes leading young culinary talent from across the world by providing them with further opportunities to demonstrate and strengthen their skills. True to its spirit, , this four-hands collaboration is one of the many platforms for contestants to gain valuable visibility and a culinary career boost on a regional and international world stage.
Applications for the third edition of S.Pellegrino Young Chef are opened until 30 April 2017 and the upcoming year will include the South East Asia Regional Finals in Singapore in October 2017, followed by the Grand Finale in June 2018 where finalists will compete for the S.Pellegrino Young Chef 2018 title.
