Wild Goose Chase Over Those used to eating goose regularly may have noticed a change in the taste or texture of the geese being served in Singapore over the past few years. This is no surprise as there has been a major shift of supply from Taiwan to Hungary. In 2009, Taiwan was the main exporter of geese to Singapore but after a low risk of transmission variant of the bird flu virus was found, all geese exports from Taiwan were stopped in March 2011. This caused restaurateurs and importers to look towards Hungary for new sources of frozen goose.
