The Meat Platters of Bocuse d’Or 2017 Chef Mathew Peters and his team’s historic win is the first for the USA – and here is their winning meat platter display, along with its 23 competing countries.

USA’s winning dish was a chicken stuffed with morel sausage, foie gras and crawfish and California green asparagus with toasted almond custard and lemon confit – a concept that revolved around ‘chicken and crayfish'.
