Singapore Pastry Alliance Sends 2 Teams to Compete Singapore is no stranger to entering world stage competitions. This year, the Singapore Pastry Alliance (SPA) sends 7 members, forming two teams to tackle two of the biggest pastry titles in the world.  
 
Junior Pastry World Championship 2017, Rimini, Italy
 
This team is led by Chef Gary Lim, instructor at Temasek Polytechnic and also Vice President of the Singapore Pastry Alliance. Chef Yong Ming Choon, the executive pastry chef of Mandarin Oriental coaches the team alongside Chef Ben Goh, executive pastry chef of Intercontinental Hotel. Rachel Chong from Fairmont Hotel as well as Chef Lim Wei Hrn make up the team that has worked hard and hopes to make Singapore proud at this championship.
 
Coupe du Monde de la Pâtisserie Lyon, France 2017
 
This prestigious competition takes place in France. Chef Desmond Lee and Chef Ng Kok Keong both from Mandarin Oriental, Chef Edwin Leow from Le Meridien Sentosa are led by Chef Alex Yen of Bakerzin Holdings Pte Ltd. This team is coached by Chef Cassian Tan from SATS Inflight Catering
