Noma Founder Spreads His Wings with Singapore Inspired Nam Nam

Claus Meyer has taken Singapore’s street food to Denmark with his new Copenhagen restaurant Nam Nam. Taking inspiration from the 3 local ethnic groups in Singapore, Nam Nam’s menu consist of roti-prata, laksa, beef rending stew, char siew and chili crab. It imports some ingredients from Singapore. The food, however, has been slightly modified – it is less greasy as compared to the food found in Singapore and spices are used only to enhance flavor and do not leave its spicy mark on the tongue.
