Gaggan Anand’s big move to Japan

Gaggan Anand is a man with a plan. After topping the best restaurant and chef lists, the chef plans to leave on a high by downing the shutters on his eponymous restaurant, Gaggan, in Bangkok by 2018. “It is a lot like what Buddhism teaches; there are four phases — this is my second, or well, it’s my mid-life crisis,” he says with a laugh.
This doesn’t mean the star chef is shutting shop. He has big plans: he wants to open Gaggan in Fukuoka, Japan, by 2020. And his space in Bangkok will be turned into a culinary school. “It will not be a commercial school, but for those 20 people who really want to cook. It will be underpriced and I will sponsor 20 per cent of them [students],” he says.
