Hands Off Gloves On

To reduce the risk of food borne illnesses from spreading, the state of California has passed a food safety law that requires chefs to wear gloves when cooking and plating food. The overall response of chefs has been one of disdain and disapproval. Many say that it does not make food preparation more hygienic, is bad for the environment and compromises the quality of the dishes being prepared. Despite the disgruntled responses of chefs and restaurant operators, they will have no choice but to apply these new regulations in a six month rollout. Restaurants may also apply for exemptions but it is unclear how they will be allotted.
