One Michelin Star Restaurant Putien Creates 5 Dishes Featuring A Seasonal Star - The Yellow Croaker Fish Heng Hwa cuisine specialist, Putien, who has a one Michelin Star to its name takes on a philosophy of dishing up platters of light, down-to-earth and flavourful food with an emphasis on fresh ingredients. In lieu of this philosophy, comes its heartwarming seasonal menu that turns the spotlight to the Yellow Croaker fish.
 
Harvested from the breeding grounds of Xiapu, China, and delivered to Putien Restaurants in Singapore within 24 hours, the Yellow Croaker fish is ensured in freshness and is best eaten during the months of September to November. This seasonal star is cooked in four different ways and presented in five different dishes available for only a limited time and in limited quantities each day.
 
Among the line-up of new creations is the Stewed Yellow Croaker Rice, a dish considered to be a traditional hakka styled favourite. Each claypot holds within it a fragrant golden treasure made with a glutinous-pearl rice mix that is fully infused with a concentrated broth from a brew of the yellow croaker's bones and is topped with pan-fried yellow croaker fillets. Another noteworthy new creation on the seasonal menu is the Deep-fried Yellow Croaker whose salty fragrance dominates the air upon serving. It is made with a process of careful dehydration followed by being deep-fried, complete with the fish's bones, head and tail till crisp but not overly crumbly. The final new creation for the seasonal menu is the Yellow Croaker Soup with Cauliflower, one that seeks to warm the body and heart. It is kept simple with the use of basic ingredients such as tomatoes, vinegar and pepper to lightly flavour the soup while highlighting the sweetness of the fish.
 
In addition to the new creations, Putien also features its hot selling 100 Second Stewed Yellow Croaker on the seasonal menu. As its name belies, 100 seconds is a strict protocol to be followed when flash stewing each 180 to 200 gram fish with ginger and shallots. What ensues is a tender, sweet and fragrant Yellow Croaker soaked in a claypot of concentrated but light fish broth. The other existing favourite being featured on the seasonal menu is the Pan-fried Yellow Croakers dish in which the fishes undergo a complicated process of being pan-fried till golden brown on the outside while remaining subtle and sweet on the inside before being stewed with a housemade sauce.
