Michelin-Starred Ramen Shop Plans Expansion

Michelin-Starred Ramen Shop Plans Expansion Yuki Onishi, chef and owner of the world’s only Michelin-starred ramen restaurant, is setting his sights on expansion. Japanese Soba Noodles Tsuta received its first star in the Tokyo Michelin Guide last December, and now Onishi is planning to open a new restaurant in Singapore.
"I had never particularly thought of expanding abroad, but what distinguished the Singapore partner was simply the fact that he came, got in line, and actually ate my food," Onishi said in an interview with Michelin Singapore. "The other people who said they were interested in Tsuta didn’t do that,"
Tsuta is reportedly on track to open next month in Singapore’s Pacific Plaza. The tiny restaurant — just 18 seats — will serve three dishes: miso soba, shio soba, and shoyu soba.
