Chefs Ryan Clift and Daniele Sperindio of Open Door Policy come up with 100% Gluten and Dairy Free Menu

Cynthia Chua, the dynamo behind the Spa Esprit Group was inspired by her travels to UK, and being aware of the gap in the gourmet scene in Singapore for delicious foods that are gluten and dairy free has worked with Executive Chef Ryan Clift to provide the diners of ODP that option.
“Each ingredient has been painstakingly selected to contribute to the overall great flavours of the dishes,” says Chef Clift. “The challenge of executing a menu like this is to find alternatives methods to replicate the same flavor and texture experiences that are associated with gluten and butter.”
Embarking on their own sustainable food journey like their sister restaurant – Open Farm Community has ODP working with Edible Garden City to establish their own indoor garden located within the bistro itself.
