CHEF JOHNNY CHAN LIGHTS UP SING YIN WITH NEW SIGNATURE DISHES With 30 years of kitchen experience under his belt, W Hong Kong’s newest Chinese Executive Chef, Jonny Chan is set to amaze people with invitingly warm and delicious Cantonese cuisine! Planning to push the boundaries and disrupt trends, Chef Johnny will be bringing a blend of the traditional and the contemporary to our magnetic Sing Yin Cantonese Dining restaurant as well as a more health-conscious approach to Cantonese cooking. His signature dishes include a tongue-tingling sautéed Australian M8 Wagyu beef with a black pepper sauce (HK$568) that contains over 10 different secret ingredients, a deliciously creamy sautéed King prawn with crab meat, Hokkaido sea urchin and deep-fried slices of conpoy (HK$328), pan-fried crab claw stuffed with minced shrimp, steamed winter melon in superior soup (HK$238) and barbecued Spanish Iberico pork (HK$298).
