Located at Tanglin Mall, Singapore, Yantra By Hemant Oberoi aims to offer dishes that reflect the rich tapestry of Indian cuisine in a contemporary setting. This is the very first collaboration for the famed Chef Oberoi post-departure from the luxury group of Taj Hotels, Resort & Palaces after more than four decades and his vast experience, which included preparing meals for prime ministers, presidents and Hollywood stars, has helped him to design the menu of Yantra By Hemant Oberoi as he draws inspiration from the 29 states of India, the less commonly known foods and its various cooking techniques hidden within the depths of India’s unique culture.
Chef Oberoi debuts the Quinoa Chaat, an innovative appetizer that he declares is a first in Singapore and the world, and it comes a small and healthy quinoa salad with tamarind dressing. More innovativeness can be seen in his Chair Chaat, an photoworthy appetizer that features a savory Indian street snack but done upclass when served bite-sized with coiling sweet gummy mango leather perched atop the chair seat. Innovation continues into his Seafood Rassa where Chef Oberoi employs use of a Siphon, a traditional coffee brewing device, to get a rich and solid soup containing a base made from spices, lentils, tamarind, tomatoes and an extract of seafood goodness from a mix of prawns, fish and lobsters.
Innovativeness aside, Yantra By Hemant Oberoi delivers a truly authentic fine dining Indian cuisine experience that at the heart of it, embraces Indian traditions. Expect to find typical Naans in a variety of flavours, Biryani and Dal among the menu line up but also look out for the highlights as such entrees of Dum Ki Sunehari Nalli, a lamb shank curry served with tempered potatoes, or the Ghee Roast, essentially a traditional chicken dish. Chef Oberoi also takes a stance of freshness being key and this is reflected in entrees such as the Masala Seabass served with spinach and mushrooms that is lightly spiced but balanced off with the natural sweetness of the fish.
Food, of course, is never complete without some drinks and Yantra By Hemant Oberoi offers not only an extensive selection of wines but also, rare and unique whiskies curated from Scotland’s finest whisky producing regions. It, additionally, does in house specials cocktails that put an Indian spin to regular favourites and interestingly titles them as Bombay Matini or Tandoori Mojito.
