Chef Acurio has over 40 restaurants across the world with his flagship restaurant, Astrid&Gastón ranking 14 on the World’s 50 Best Restaurants 2013. He will be opening a new restaurant, La Mar, at Miami’s Mandarin Oriental in February 2014, bringing Peruvian cuisine to greater heights. Although Chef Acurio felt that Peruvian cuisine has not yet reached its peak in terms of common consensus or recognition of its existence, Peruvian cuisine was named the top ethnic cuisine for 2014. Chef Acurio is positive of Peruvian cuisine taking its position one day, although not sure when, with Italian and Japanese cuisine took pretty long to make their mark. He hopes that Peruvian cuisine would see the light soon through the efforts of his fellowman and culinary schools like Pachacutec School of Cuisine in Lima.
