Food wastage in Singapore is a conundrum. By cooking consciously and minimising our food wastage, it will go a long way and bring in benefits. A good place to start is at home by taking a nose-to-tail approach when it comes to ingredients. The most common food that gets bought and then thrown away is salad. When you found that your salad leaves have wilted, don’t bin them. You can either give it a cold water dip to refresh its droopy state or blend them to create a soup. Another example is milk. It’s still good to use even past its expiry date. It may be sour but it’s not harmful for consumption. Rather, it is the perfect ingredient to make scones, soda bread and scrambled eggs.
