Singapore Airlines (SIA) has a new Chinese inflight menu for passengers travelling in Suites or first class between Singapore and Hong Kong. Taking inspiration from a Confucian ideal that “one should only consume food that is in season”, Chef Zhu Jun, a member of SIA’s international culinary panel, created this new experience known as “Shi Quan Shi Mei”. It features a nine-course menu and passengers can expect dishes such as braised goose breast and tofu; traditional Shanghai salted pork and bamboo shoot soup; braised sea cucumber, baby abalone and pumpkin; chicken cured pork meat and sausage rice; and green tea glutinous cake.
