New year, new resolutions, new food trends which will take over the culinary scene as predicted by F&B professionals, consultants, chefs, nutritionist and food aficionadas. With events like World Gourmet Summit that bring in renowned overseas chefs to Singapore, you no longer have to travel to meet the chefs to experience their food. Stay where you are because they’re coming to you. Noma’s Rene Redzepi will be traveling to Sydney this month and chef Albert Adria will be in London this February.
Milkshake no longer brings boys to the yard because vegetable protein is expected to do the trick instead. It’s the International Year of Pulses (beans, peas, chickpeas) as declared by United Nations and Sylvain Charlebois from University of Guelph’s Food Institute says that part of this change is due to factors like animal welfare and sustainability.
