Granny Smith Apple Mascarpone

Walnut Sponge
500g whole eggs
300g sugar
250g flour, sieved
150g walnuts, ground
120g butter, melted
Granny Smith apple mousse and
mascarpone, for filling
Feuilletine, for topping
Green cocoa spray, for spraying
For the walnut sponge: Whisk the whole eggs and sugar in a bain-marie until light and fluffy. Fold in the sieved flour, ground walnuts and melted butter. Pour the batter into a baking pan and bake in a pre-heated oven at 210°C, for about 8 minutes. Remove and cut in halves.
Fill half of walnut sponge with the granny Smith apple mousse and mascarpone and cover with another layer of apple mousse. Top with feuilletine and cover with the other half walnut sponge. Freeze the log cake and then unmould. Spray the log cake with green cocoa spray. Makes 1 log cake
