Singapore’s French Stall Chef is Not Ready to Hang Up His Apron Adorned with classical statues and coloured in patriotic blue, white and red stripes, The French Stall exudes a quaint charm. By night, the corner shop house transforms into a true French bistro - antique street lamps light up as people dine on Parisian cafe tables and chairs.

Holding on to traditional methods for 40 years, Chef Xavier Le Henaff confesses that it’s time to spice things up as times are a-changing and he is up against trendier, more contemporary bistros offering competitive prices. “When we started we were one of the few doing casual French dining. Today it’s the reverse - there’s only a few doing fine French dining. The majority of restaurants that open up today are casual restaurants,” he said.

Despite the market saturation, Chef Le Henaff still has a burning passion to reinvent his restaurant, saying that he wants to "set the trend" in a new concept just as he did 15 years ago. However, he declined to reveal any details about his new concept, and if it will be located in a new area.
