Herve This discovered Note by Note cooking (NbN), where food is broken down to its basic compounds and made from this process. This’s goals are for NbN to be readily available and inexpensive for everyone. NbN allows chefs to create novel flavours and taste easily, by using different compounds and putting them together.
While the idea of NbN is brilliant and allows many more to be fed, people may find it difficult to accept that food is chemically created and not harvested from the earth. The change in people’s eating habits or what they associate as food is something This has been working on. Partnering with different chefs, he believes he can make NbN the food of the future.
