Chef Yoshihiro Narisawa inspired by cooking at Bottura’s Refettorio Ambrosiano project An initiative spearheaded by acclaimed Italian chef Massimo Bottura, Refettorio Ambrosiano saw chef Yoshihiro Narisawa in the kitchen during Expo Milano 2015. Crafted by Bottura to be a response to the huge amount of food waste at the expo, the soup kitchen feeds the homeless, refugees and low income families, with dishes from the world’s top chefs. Narisawa, who cooked there for two days in June, excitedly shares his remarkable experience, saying “At lunch the guests are elementary schoolchildren, so if they don’t like something, they just leave it.
