Irishman crowned San Pellegrino Young Chef 2015 After a day of intense competition at the Grand Final last Friday, Irish chef Mark Moriarty was crowned the San Pellegrino Young Chef 2015. He sought to “capture the essence of Ireland and present humble, locally sourced ingredients in a unique way” with his winning menu of Celeriac Baked in Barley and Fermented Hay, Cured and Smoked Celeriac and Toasted Hay Tea.
