It is always fascinating to know that even as a Chinese, we may all be speaking different languages in the sense of speaking different dialects. One of the difficulties in identifying the origins of Chinese delicacy comes from the fact that these delicacies may come from different canton or provenance with perhaps different flavours favoured by different dialect groups. For example residents in one provenance may prefer something that is more salty whilst the other something more spicy. Well Pak Loh Chiu Chow aims in delivering authentic Teochew (also known as Chiu Chow) dishes, preserving the spirit and ingredients of the Teochew group but tweaking the recipes a little to delve deeper into the rich culture.
