Step into the restaurant and you’ll be transported back to the 1960s in Southern California (SoCal) where you will find yourself surrounded by elegant decors that rewind back to a glorious era of fireplace, woodie surf wagons, leather booths and sunken living rooms.
Enjoy a selection of the SoCal cuisine as it is infused with nostalgia, creativity, and freshness just like the space. Start off with the coastal flavours of the Grilled Oysters ($22) served with a Chipotle chilli aromatic and tangy chipotle bourbon butter.
Life is too short not to have Pasta. At California Republic, the pasta are lovingly handmade by a dedicated team of artisans daily. Indulge in a few pasta options that are worth skipping your diet plans like the
Celery Root Cappellacci (S$29) similar to tortellini, the pasta is stuffed
with celery root puree and cooked in a sauce of roasted field mushrooms, topped with parmigiano or the
Smoked Bucatini ($34) pork ragu in bianco - made with stock instead of tomato sauce. Soffritto consists of onion, carrot and celery - the holy trinity of aromatic ingredients. Transpires a light and fresh feel to the Bucattini.
