Guests got to see that for themselves recently at Dom Pérignon’s recent launch, which took place at 1 Michelin Star Italian fine dining restaurant 28 Wilkie, home of the Dom Perignon Society. Chef de Cuisine, Seth Lai, presented a masterfully crafted five-course meal to pair with the wines. The Vintage 2010 was paired with Hiramasa Petit Pois, Kalua Hybrid Caviar and Colatura. Next, Tagliatelle was adorned with spring onion, shirasu and squid paired with Vintage 2008. The finale 2012 was the delightful Lamb Saddle as the main course and the ethereal Bavarese with yoghurt, mara des bois and pistachio.
