Pasir Panjang Charm at The Lounge at Riviera! When we meet PasirPanjangBoy team Tinoq Russell and Dylan, they're looking over a beautifully crafted board filled with appetizers, plated beautifully with flowers. Despite this, they are making changes and adding tweaks, adding dark soy sauce on the ngoh hiang and chilli on the kueh pie tee.
 
This is a testament to the work ethic of both chefs, who are working with Chefs Remy Carmigiani and Nicolas Vergnole of The Lounge at Riviera Singapore to create a limited edition collaboration between them: a marriage of Mediterranean flair with Peranakan flavours. It's something which may seem as a surprise to many but to Chef Tinoq, it's actually one that makes sense. From this collaboration, a four-course menu was born, one which has the sensibilities of the Peranakan culture that your Nyonya grandmother would approve, but with the execution and style of Mediterranean-styled cooking. 
 
" What's important in this collaboration is to share our food and culture wiith others and understand not just the cuisine of others, but also let people taste and understand our own culture so that ," Chef Tinoq shares. "It's a very good way for Dylan and I to partake in this event. We love eating other people's food and learning from other people. When we found out that Riviera's a Mediterranean influence, we jumped at the chance to work with them. We love their food, it has moved us and taught us a lot of things."
 
This is a sentiment shared by the chefs at The Lounge at Riviera. "This is my first four hands menu, so I am very excited. This is something that we have never tried to do before, so mixing up both Mediterranean and a cuisine that's so iconic in Singapore is something different. We're happy to work with them," says Chef Carmigiani. "I came to Asia because I am a big fan of Asian food, Asian cuisines and Asian culture. I am very happy to create and finish these dishes. " 
  
The menu, available at $98++ per person, which will be a bayside brunch event held at The Lounge at Riviera, will be held on Saturday, 4th, 11th and 25th September, as well as Saturday, 2nd October from 12pm to 2pm.
